Ingredients

Sausages-4
Potatoes-250gms
Cream/Milk-1 Cup
Butter-30gms
Onions-2
Chicken stock-1 cup
Sugar-1/2 tsp
Balsamic Vinegar-2 tbsp
Corn flour-2tbsp
Salt and Pepper to taste


Preparation method

  1. Boil the potatoes with salt, and keep it aside.
  2. Melt butter in a saucepan,add mashed potatoes and add milk.
  3. Whip it gently , add salt and pepper and mix it well.
  4. Melt the oil and butter in a large saucepan over a gentle heat. Add the onion and cover with a lid. Cook slowly for approx 10 mins or until the onions are soft and translucent.
  5. Add the sugar and balsamic vinegar to the onions and stir well. Cover with the lid and continue to cook for a further 5 minutes.
  6. Add the stock and boil gently uncovered for 5 minutes.
  7. Prepare the flour mixture by adding a tsp of water and pour the flour mixture back into the onion gravy, and boil until the gravy is slightly thickened.
  8. Heat oil in a pan, place the sausages and fry them until it turns to golden brown on all sides.
  9. Place the sausages and mash  on the plate and pour the hot onion gravy over the mash and sausages.
  10. Serve it immediately.

Basmati Rice-300gms
Onion-1
Green chillies-2
Ginger Garlic paste-2tbsp
Cumin seeds-1tbsp
Cinnamon-2
Bay Leaves-2
Cardamom-2
Cloves-4
Coriander leaves
Lemon-1
Salt to taste
Oil


Preparation method

  1. Heat ghee in a pan, add washed basmati rice and fry it nicely for the 2 mins. keep it aside.
  2. Heat ghee in a pan,add cumin seeds, cinnamon,cardamom,cloves and bay leaves
  3. Add green chillies and chopped onions and saute it till it reaches golden brown.
  4. Add ginger garlic paste and saute it.
  5. Add the onion mix, coriander leaves, ghee, lemon juice and salt to the rice.
  6. Add 1:2 ratio water and cook it in a normal process..
  7. Ghee rice is ready to serve.
  8. Serve it hot with raita & curry

Ingredients:

Radish-1medium

Toor dal /Moong dal-1 cup

Tamarind juice-2 cup

Onion-1 medium/Shallots-10

Tomato-2

Green chillies-2

Salt to taste

Coriander leaves

Oil

 

Spices:

Turmeric powder-1/4 tsp

Asafoetida/hing- 1pinch

Sambar powder-1 tsp

 

For the Tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Fenugreek seeds-1 pinch

Curry leaves

 


Preparation method

  1. Wash and clean the toor dal or moong  dal,  add 1:2 ratio of water.
  2. Add turmeric powder, cumin seeds, hing  and  2 garlic cloves
  3. Cook it in a pressure cooker For the 3 to 5 whistles.
  4. Heat oil in a pan, add mustard, fenugreek seeds, cumin seeds, urad dal, red chillies and curry leaves.
  5. Once they spluttered, add onions or shallots, green chillies and sauté it
  6. Add tomatoes, turmeric powder, sambar powder, hing, salt and cook it until oil floats out.
  7. Add chopped radish sauté it For the 5 min and add cooked dal.
  8. Add tamarind juice, mix it well and cook it For the 12 mins in a low flame.
  9. Add Fresh coriander leaves and serve it hot.

Idli-is a traditional breakfast in south Indian households. Idli is savory cake of South India that is most popular throughout the southern part of India The rice cakes are usually two to three inches in diameter and are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body. idlis are usually served in pairs with chutney, sambar, or other accompaniments. Mixtures of crushed dry spices such as milagai podi are the preferred condiment for the idlis eaten on the go. A variant of Idli known as sanna is very popular amongst the Goans and other Konkani people. Another variant known as “Enduri Pitha” is very popular in Odisha.


Recipe Cuisine: Indian;     Preparation Time: 1hr;    Cooking Time: 20 mins;    Makes: 25 

Ingredients

Idly rice – 4 cups
Urad dal – 1 cup
Fenugreek – 1 tsp
Salt – 1 tbsp


Preparation method 

  1. Wash and soak rice and dal overnight separately.
  2. Soak fenugreek seeds along with urad dal. Drain water.
    Grind dal and rice separately until smooth.
  3. Sprinkle water now and then.The consistency of the batter should neither be thick nor thin.
    Mix both the grounded rice and dal together. Add salt and leave it For the 7-8 hours For the fermentation.
  4. In winter it will take longer time, especially in Europe, US countries,you can use Oven to ferment
  5. Place the batter in a large container, as the batter will increase in its volume.
  6. After fermentation you can see the air pockets in the batter, mix it well.
  7. For the making idlis, grease the Idli plate with oil (optional) . Heat the Idli pan with water and allow the water to boil.
  8. Pour 3/4 the ladles of idli batter to the idli plates and steam it for the 10-12 minutes.
  9. To check it’s cooked, wet the fork and insert it into an idli if it is not sticky and comes out easily idli is ready.
  10. Just switch off the flame and take the idli plate out.
  11. Sprinkle water behind the idli plates and make it to cool.
  12. After a few seconds dip a spoon in water and carefully take out the idlis.
  13. Serve it hot with chutney or sambar.

Fish curry is prepared using fresh curry powder,which has been explained the video.The fish is cooked with the spices,shallots,garlic,tomato and tamarind. For the Tadka/Tempering:

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Red chillies-4

Curry leaves-1 spring

Fenugreek seeds-1/4 tsp

Cumin seeds-1/4 tsp

 Spices:

Turmeric -1/2 tsp

Fish Curry Powder-2tsp

Hing-1/4 tsp

Curry Powder

Red Chillies-6

Coriander seeds -5tsp

Cumin-1tsp

Peppercorns -1/2

Urad dal 1/2

Mustard -1/2

Curry leaves -3 sprig


Preparation method:

  1. Heat  a tsp of  oil in a pan and fry the spices, make a fine powder (curry powder) using blender. keep aside.
  2. Heat oil in a pan add tempering spices.
  3. Once they splutter, add chopped onions, shallots, green chillies, garlic cloves and sauté it.
  4. Add chopped tomatoes, turmeric, hing  and curry powder, mix it well.
  5. Allow it to cook for few mins.
  6. When the oil separates and gravy is thick add tamarind juice and salt.
  7. Cover it and cook for 20 mins in a medium flame.
  8. Add fish slices and cover it, simmer for 10 min.
  9. Garnish it with coriander leaves.
  10. Serve it hot with rice or idli/dosa.

Broad beans stir fry recipe is very healthy dish cooked in less spices with less oil. Broad beans or lablab beans is very good for health and used all over the world in different names in India it is known as broad beans, avarakkai, chikkukai and so on.you can make simple and quick dishes using broad beans.

Broad beans are also rich in both folate and B vitamins, which we need for nerve and blood cell development, cognitive function and energy.Broad beans are an excellent vegetable source of protein and fibre. This may be a winning combination for weight loss.This food is very low in Saturated Fat, Cholesterol and Sodium.

Broad Beans is good for skin.you will get shiny gorgeous skin. Broad beans leaf’s juice removes any pimple marks or any scars easily. Variety of dishes can be made with broad beans.   3. Add turmeric powder, hing, sambar powder and salt.
  4. Sprinkle water, cover it and cook for 15 mins in a low flame.
  5. Serve it hot with rice.

Preparation method:

  1. Grated the carrot like ribbons.
  2. Slice the tomatoes and cucumber.
  3. Finely chop the coriander and cabbage.
  4. Take bread, apply the butter evenly.
  5. Add chopped cabbage sprinkle pepper and salt
  6. Add carrot ribbons, sprinkle pepper and salt
  7. Add sliced tomatoes, sprinkle pepper and salt
  8. Add sliced cucumbers and coriander leaves.
  9. Sprinkle pepper and salt.
  10. Add grated cheese and close it with the other bread slice.
  11. Sandwich is ready!
