Ingredients

Drumstick leaves-1 cup

Green chillies-2

Shallots-6

Garlic cloves-2

Cumin seeds-1/2 tsp

Asfoedieta-2pinch

Sesame oil-1 tsp

Turmeric powder-1/4 tsp

Egg-2

Salt to taste

Oil

 

For the tempering/tadka:

Mustard seed-1/2 tsp

Urad dal-1/2 tsp

Cumin seeds-1/2 tsp

Red chillies-2

Curry leaves


Preparation method:

  • Wash and chop the leaves finely.
  • Heat oil or ghee in a pan, add tempering spices.
  • Once they splutter, add chopped onions,green chillies  and sauté it.
  • Add the chopped leaves and mx it well.
  • Add all the spices, less water, less salt cover it  and cook For the 10 mins in medium flame.
  • Once they done keep it open and stir well For the 3 mins in a low flame.
  • Add beaten eggs and scramble it nicely.
  • Serve it hot with rice or roti

Roasted Shrimp with Garlic

Roasted Shrimp
This is a simple recipe roasted shrimp with garlic. Perfect to serve over rice or pasta. It also makes a great appetizer.Easy to prepare and very delicious.


Ingredients:

Shrimp-250 gms
Garlic-3
Chilli flakes-1/2 tsp
Salt and Pepper to taste
Olive oil


Preparation method

  1. Heat oil in a pan , add the minced garlic and saute it
  2. Add the shrimp, chilli flakes, salt and pepper.
  3. Mix it well, so that the seasoning coated evenly on the shrimp.
  4. Roast it until it turns golden brown and soft for few mins.
  5. Serve it hot with salads

  • When they splutter, add the lemon juice, hing, turmeric powder and salt.
  • When it boils add sesame oil and the cooked rice, mix it well
  • Serve it hot with the papads.

Dal Dosa -AdaiDal Dosa – Adai – is traditional south Indian dish usually prepared for the breakfast or dinner. It’s very healthy dish rich in protein, prepared using mixed lentils. It is very easy to prepare, no need for the fermentation, it is an instant dosa. This batter is slightly coarser from normal dosa batter. You can prepare either thick or thin crispy dosa according to your taste.

This is spicy dosa, so well goes with any sour or coconut related dishes like coconut chutney, avial, tomato chutney, onion chutney and lime pickle. Variations can be made by adding grated carrot, grated coconut, grated ginger, shallots, grated radish and drumstick leaves, spring onions depending on individual preference. You can try egg dosa and masala dosa too. It’s very delicious and yummy dish.

Recipe Cuisine: Indian;     Preparation Time: 25 mins;    Cooking Time: 20 mins;    Serves:  15 

 Ingredients

 Raw rice -1 cup

Toor dal – ½ cup

Moong dal – ½ cup

Chana dal – ½ cup

Urad dal – ½ cup

 For the grinding

 Red chillies – 4

Cumin seeds -½ tsp

Fennel seeds – ½ tsp

 Ingredients added to the batter

 Turmeric powder – ¼ tsp.

Ginger grated – ¼ tsp (optional)

Onion-1 finely chopped (optional)

Asafoetida – 2pinch

Coriander leaves chopped

Curry leaves

Salt to taste

Oil – (Ghee or Gingelly/Sesame oil is preferable)

Preparation method

  1. Wash the rice and dal mixture, and soak it For the 2 -3 hours.
  2. Grind it coarsely, not too smooth along with red chillies, cumin seeds, and fennel seeds.
  3. Sprinkle little water, so that the batter is neither thick nor watery.
  4. Add turmeric powder, asafoetida, salt, curry leaves, coriander leaves, onion and ginger (optional) to the batter and mix it well.
  5. Heat the pan and pour a ladle of batter and spread it like a normal dosa. Sprinkle few drops of oil.
  6. Once it’s cooked and golden brown in colour flip it over to the other side.
  7. Sprinkle few drops of oil to get a crispy dosa.
  8. Remove from the pan once it turns to golden brown and cooked well.
  9. Serve it hot with coconut chutney or tomato chutney.

Required techniques: Consistency is very important, add less water to get the right batter consistency.Don’t cook until it gets dry, make sure enough moisture is there.

Orange rice is simple but very tasty meal.it is a delicious dish you can put together very easily.you can prepare with leftover rice too.Rich in vitamin C .it is similar to lemon rice,but the orange flavor and the aroma of spices leads to say hmmm… Wow!

For the tempering/tadka

Mustard-1/2 tsp

Urad dal-1/2 tsp

Curry leave-2 sprig

 

For the sauté:

Onion-2 medium

Green chillies-3 slitted

Ginger -1 inch

 


 

Preparation method:

 

  1. Heat oil in a pan add tempering spices.
  2. Once they splutter, add the chopped onions, green chillies, ginger, salt and sauté it.
  3. Add the sooji and water (1:2 ratios) and stir well, to avoid lumps.
  4. Cover it and cook For the 5 mins in a low flame.
  5. Garnish it with coriander leaves and serve it hot with chutney.

Curry powder-1/4 tsp(optional)

Cinnamon-2

 

For the Sauté:

Tomatoes- 2 medium (optional)

Garnishing

Fresh Coriander – 1/3 bunches

 

Spices For the DD:

Cumin seeds -1 tsp

Black Pepper corns- 1 tsp

Shallots-10

Garlic cloves-8


Preparation method:

  1. Crush the tomato using hand and crush the Spices using DD.
  2. Heat oil in a pan, add cloves, cinnamon, green chillies and curry leaves.
  3. Add crushed tomatoes and sauté it.
  4. Add the chicken stock, turmeric, salt, hing and curry powder.
  5. When it boils, add the dd spices.
  6. Cover it and cook it For the 15 min in a medium flame.
  7. Stir it occasionally. When it’s done, simmer it For the 5 mins .
  8. Garnish with Fresh coriander and serve it hot.

  4. Marinate it for 1 hr.
  5. Heat oil in a pan and add fish steaks few at a time.
  6. Cook it in a low flame for 12 mins.
  7. Fry it until it turns to golden brown.
  8. Serve it hot with salad.
