Instant Semolina(Rava) idli

Instant: rava idli  – is traditional south Indian dish usually prepared for the breakfast or dinner. It’s very healthy dish rich in protein, prepared using mixed semolina and lentils. It is very easy to prepare, no need for the fermentation, it is an instant idli. This batter is slightly coarser from normal idli batter. To add spicy to it, you can add pepper corns .This is spicy idli, so well goes with any sour or coconut related dishes like coconut chutney, tomato chutney, onion chutney and sambar.

Ingredients

Ravai /semolina – 1/2 cup
Rice flour – 1/2 cup
Buttermilk-1/2 cup
Green Chillies – 1 finely chopped
Ginger – 1 inch piece
Whole black pepper – 1 tsp
Cumin seeds –1 tsp
Onion optional-1
Salt as required

Preparation method

  1. Soak semolina in a little buttermilk For the 30 mins.
  2. Grind it in a blender coarsely with rice flour.
  3. The batter should be thin and watery.
  4. Add finely chopped ginger, finely chopped chillies, cumin seeds, whole black pepper and salt.
  5. For making idlis, grease the Idli plate  with oil(optional) .
  6. Heat the Idli

    pan with water and allow the water to boil.

  7. Pour 3/4 the ladle of idli batter to the idli plates and steam it For the 10-12

    .minutes.

  8. To check its cooked,wet the For thek and insert it into a idli if it is not sticky

    and comes out easily idli is ready.

  9. just switch off the flame and take the idli plate out
  10. Sprinkle water behind the idli plates and make it to com.
  11. After a few seconds dip a spoon in water and carefully take out the idlis.
  12. Serve it hot with chutney or sambar.

Fish Fry – Fish Fry Indian Style – Scrambled fish plantain fry  is called as fish puttu originated from Kerala. Kerala is famous for fish recipes.Usually fish puttu made with shark fish, but now a days mackerel or seer fish can also be used. Fish puttu is very popular dish in India especially in southern part of India. Scrambled plantain is originated from Andhra cuisine. Scrambled fish plantain fry is my version of cooking based on Andhra, Tamil and Kerala cuisines.Many variety of dishes can be prepared specially in southern part of India. Fish tamarind curry, Fish fry, fish thoran, Masala fried fish, Fish coconut curry, Fish chukka..each one is different in its preparation and taste. In Kerala fish recipes are more popular than other recipes. you can find this recipe in menu almost in all restaurants.

The scrambled plantain is prepared using Andhra cuisine method. The tempering or tadka is based on Tamil Cuisine method. This is my version of cooking. Ingredients:

King Fish – 500 gms
Chilli powder-2 tsp
Turmeric-1/2 tsp
Salt to tatse
Oil to fry

For the Saute:

Onions-2 medium
Green chillies-2
Garlic cloves-4
Ginger thumb size-1

For the tempering:

Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Cumin seeds-1/2 tsp
Curry leaves


Preparation method:

  1. Pan fry the fish with turmeric and salt.
  2. Peel it and cleans the flesh.keep it aside.
  3. Boil the raw banana(plantain) with turmeric and salt.
  4. Peel and grate it evenly.Keep it aside.
  5. Smash it like a grated fish and grated plantain. keep separately.
  6. Heat oil in a pan, add tempering spices.
  7. Once they splutter, add chopped onions, green chillies, chopped garlic, chopped ginger and sauté it.
  8. Add the grated fish, grated plantain, turmeric powder, chilli powder and salt. Mix it gently.
  9. Cook it in a slow flame for 12 mins and stir it well.
  10. Add chopped coriander leaves and serve it hot.

Stuffed Eggplant Curry

Stuffed Brinjal Curry – is a south Indian dish mainly from temple city Madurai. It is very easy to make and well goes with any variety rich. Its nutrition facts rich in iron.it differs from normal eggplant recipes, tastes very different and delicious.

 


Ingredients:

Brinjal/ Eggplant

Turmeric powder

Salt to taste

Oil

 

For the tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Curry leaves

Onion

 

For the Grinding:

Red Chillies – 8

Coriander seeds -6 TSP

Cumin seeds -1 tsp

Fennel seeds – 2 tsp

Black Pepper corns- 1 tsp

Curry leaves-1/3 bunch

Cardomom-2

Cloves-2

Cinnamon-2

Coconut-1/2


 

Preparation method:

  1. Fry the spices in the dry pan, till it gets nice aroma.
  2. Grind the spices to a smooth paste with the coconut.
  3. Add turmeric powder and salt to the masala paste
  4. Split the eggplant, and stuff the masala paste and mix it well so that it’s nicely coated on it.
  5. Marinate it For the 15 mins.
  6. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and curry leaves.
  7. Once spluttered, add chopped onions and sauté it.
  8. Add the stuffed eggplant and stir it well.
  9. Cover it and cook For the 15 mins in a low flame.
  10. Serve it hot with rice.

Ingredients:

Ivy gourd -250gms

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Salt to taste

Oil


Preparation method:

Wash ,pat dry and chop ivy gourd  into medium  slices.

Add chilli powder, turmeric, hing, salt  to the okra slices and mix it well.

Marinate it For the 15 mins.

Heat oil in a pan, add the marinated pieces and deep fry it till it turns to golden brown.

Add few at times in medium flame.

Serve it hot with rice or roti.

Broad beans egg pulao recipe is very healthy dish cooked in less spices with less oil. eggs added to the beans and scrambled cooked in a low flame. Broad beans or lablab beans is very good for health and used all over the world in different names. In India it is known as broad beans, avarakkai, chikkudu kai and so on.you can make simple and quick dishes using broad beans.

The egg is a nutrient-dense food, containing high quality protein and a wide range of essential vitamins, minerals and trace elements. Eggs are not high in fat.it contains Vitamin A, D,B2,B12,Folate,Biotin,,pantothenic acid,Choline, Minerals-Phosphorus,Iodine,Selenium.it helps improving healthy skin, eyes and the nervous system.it helps in the development of all cells in the body,for healthy bones and teeth,formation of red blood cells and for energy metabolism.

Broad beans are also rich in both folate and B vitamins, which we need for nerve and blood cell development, cognitive function and energy.Broad beans are an excellent vegetable source of protein and fibre. Asafoetida/hing- 1pinch

Sambar powder-1 tsp

Salt to taste

Egg -3

Onion-1 medium (optional)

Oil

For the Tempering/Tadka

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Curry leaves


Preparation method

  1. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  2. Add chopped onions and sauté it till it turns to golden brown.
  3. Once spluttered, add chopped broad beans  and sauté it.
  4. Add turmeric powder, hing, sambar powder and salt.
  5. Sprinkle water, cover it and cook for 15 mins in a low flame.
  6. Add eggs and scrambled it with the broad beans,cook for 5 mins.
  7. Add cooked rice, sprinkle sesame oil or ghee  and mix it well.
  8. Garnish it with fresh coriander leaves
  9. Serve it hot with raita or papad.

Tomato-2 medium

Green chillies-3

Tamarind juice-1 cup

Garlic cloves-6 (optional)

Coriander leaves

Salt to taste

Sesame oil

 For the Tadka/Tempering:

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Red chillies-4

Curry leaves-1 spring

Fenugreek seeds-1/4 tsp

Cumin seeds-1/4 tsp

 Spices

Turmeric -1/2 tsp

Chilli powder-1 tsp

Coriander powder-2 tsp

Cumin powder-1/2 tsp

Pepper powder-1/2 tsp

Hing-1/4 tsp


Preparation method

  1. Heat oil in a pan add tempering spices.
  2. Once they splutter, add chopped onions, green chillies, garlic cloves and sauté it.
  3. Add chopped tomatoes and spices, mix it well.
  4. Add tamarind juice, salt and cook until oil float at the top.
  5. Add  chopped drumstick and sauté it.
  6. Cover it and cook for 20 mins in a medium flame.
  7. Garnish it with coriander leaves.
  8. Serve it hot with rice.
