Garlic Chutney

Ingredients

Shallots-1/2 cup

Garlic cloves-1 cup

Red chillies-4

Tomatoes-2

Curry leaves-2 sprig

Chana dal-2tsp

Tamarind- 1 amla size

Hing-2 pinch

Turmeric-1/2 tsp

Salt to taste

 

For the Tadka:

Mustard-1/2 tsp

Urad dal-1/2 tsp

Curry leaves-2 sprig

Oil


Preparation method:

  1. Fry the Onions, tomatoes, garlic, curry leaves, chana dal, tamarind and red chillies in a pan with a drop of oil.
  2. Add it to a blender and make a fine paste by adding water.
  3. Heat oil in a pan, add mustard, urad dal, curry leaves
  4. Once they splutter add it to the chutney, add salt, turmeric and hing.
  5. Once they boil, sprinkle sesame oil.
  6. Serve it with hot idly or dosa.

In broad beans masala the marination and the mixing part is very important, it gives very juicy taste and nice aroma. Broad beans or lablab beans is very good for health and used all over the world in different names. In India it is known as broad beans, avarakkai, chikkudu kai and so on.you can make simple and quick dishes using broad beans.

Broad beans are also rich in both folate and B vitamins, which we need for nerve and blood cell development, cognitive function and energy.Broad beans are an excellent vegetable source of protein and fibre. This may be a winning combination for weight loss.This food is very low in Saturated Fat, Cholesterol and Sodium.

BroadBeans-250 grams

Turmeric powder-1/4 tsp

Asafoetida/hing- 1pinch

Sambar powder-1 tsp

Shallots -10

Cumin seeds-1/4 tsp

Salt to taste

Oil

 For the Tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Curry leaves


 Preparation method:

  1. Wash and chop broad beans to  a medium size.
  2. Add turmeric powder, hing, sambar powder, cumin seeds, shallots and salt.
  3. Mix it well and marinate it for 10 mins.
  4. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  5. Once spluttered, add marinated broad beans and sauté it.
  6. Sprinkle water, cover it and cook for 15 mins in a low flame.
  7. Serve it hot with rice.

Fish Curry – Fish Chukka Recipe – chukka is prepared using South Indian Chettinad style. Usually chukka prepared using mutton. Mutton chukka is one of the popular dish in chettinad cuisine. I have done nearly 16 types of chukka recipes with different combinations – chicken, mutton, prawn, fish, potato, cauliflower, egg and mushroom. you can watch these recipe videos in my site. Fish Curry – Fish Chukka Recipe – The cooking method is based on South Indian chettinad cuisines.Usually the chukka prepared using mutton.This is my version of cooking, in the first part fish pieces cooked with , onion tomato, ginger garlic gravy. Then fish is added to the tadka red chillies & cumin. The dry roasted spices powdered, added to the fish with tamarind juice.The curry is cooked in the slow process till the gravy is dry. Tt makes the fish very juicy, tender and well coated with spices.The texture and taste of the recipe is great.

Fish -500gms
Tamarind juice-3tbsp
Salt to taste
Oil

For the Tempering / Tadka:

Cumin seeds-1tbsp
Curry leaves-3 sprig
Red Chillies-4
Ginger flakes-2tbsp
Garlic chopped-2 tbsp

For the Sauté:

Shallots-250 gms
Garlic paste-1/2 tsp.
Ginger paste-1/2 tsp
Tomatoes- 2 small(make it puree)
Turmeric — 1/2tsp

Spices Used for the grinding

Cumin seeds-11/2 tbsp
Red Chillies-5
Coriander seeds-2tbsp

Garnishing-optional

Fresh Coriander — 1/3 bunches


Preparation method:

  1. Dry roast the spices and make a fine powder.Keep it aside.
  2. Heat oil in a pan, add cumin seeds, curry leaves, and red chillies.
  3. Add ginger garlic flakes and crushed shallots, saute it .
  4. Add ginger garlic paste and cook it.
  5. Add tomato puree and the curry powder,tamarind juice with the salt.
  6. Cook it for few mins in a medium flame.
  7. When the oil floats on the top, add the fish pieces
  8. Cover it and cook it for 5 mins in a low flame.
  9. Open the lid and cook for 5 mins, and make it dry.
  10. Garnish it with fresh coriander and serve it hot with rice or roti.

Stuffed Eggplant Curry

Stuffed Brinjal Curry – is a south Indian dish mainly from temple city Madurai. It is very easy to make and well goes with any variety rich. Its nutrition facts rich in iron.it differs from normal eggplant recipes, tastes very different and delicious.

 


Ingredients:

Brinjal/ Eggplant

Turmeric powder

Salt to taste

Oil

 

For the tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Curry leaves

Onion

 

For the Grinding:

Red Chillies – 8

Coriander seeds -6 TSP

Cumin seeds -1 tsp

Fennel seeds – 2 tsp

Black Pepper corns- 1 tsp

Curry leaves-1/3 bunch

Cardomom-2

Cloves-2

Cinnamon-2

Coconut-1/2


 

Preparation method:

  1. Fry the spices in the dry pan, till it gets nice aroma.
  2. Grind the spices to a smooth paste with the coconut.
  3. Add turmeric powder and salt to the masala paste
  4. Split the eggplant, and stuff the masala paste and mix it well so that it’s nicely coated on it.
  5. Marinate it For the 15 mins.
  6. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and curry leaves.
  7. Once spluttered, add chopped onions and sauté it.
  8. Add the stuffed eggplant and stir it well.
  9. Cover it and cook For the 15 mins in a low flame.
  10. Serve it hot with rice.

  3. Once spluttered, add chopped broad beans  and sauté it.
  4. Add turmeric powder, hing, sambar powder and salt.
  5. Sprinkle water, cover it and cook for 15 mins in a low flame.
  6. Add eggs and scrambled it with the broad beans,cook for 5 mins.
  7. Add cooked rice, sprinkle sesame oil or ghee  and mix it well.
  8. Garnish it with fresh coriander leaves
  9. Serve it hot with raita or papad.

Drumstick-1

Onions-2 medium

Tomato-2 medium

Green chillies-3

Tamarind juice-1 cup

Garlic cloves-6 (optional)

Coriander leaves

Salt to taste

Sesame oil

 For the Tadka/Tempering:

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Red chillies-4

Curry leaves-1 spring

Fenugreek seeds-1/4 tsp

Cumin seeds-1/4 tsp

 Spices

Turmeric -1/2 tsp

Chilli powder-1 tsp

Coriander powder-2 tsp

Cumin powder-1/2 tsp

Pepper powder-1/2 tsp

Hing-1/4 tsp


Preparation method

  1. Heat oil in a pan add tempering spices.
  2. Once they splutter, add chopped onions, green chillies, garlic cloves and sauté it.
  3. Add chopped tomatoes and spices, mix it well.
  4. Add tamarind juice, salt and cook until oil float at the top.
  5. Add  chopped drumstick and sauté it.
  6. Cover it and cook for 20 mins in a medium flame.
  7. Garnish it with coriander leaves.
  8. Serve it hot with rice.

Ingredients:

Sena-250 gms

Turmeric-1/2 tsp

Hing-2 pinch

Salt to taste

Oil

For the grinding:

Garlic cloves-6

Fennel seeds-2 tsp

Cumin seeds-1 tsp

Red chillies-4


Preparation method:

Peel it and cut into cubes, add turmeric, hing  and salt.

Pressure cook the sena, filter and keep it aside.

Heat oil in a pan, add sena cubes and fry it till it turns to golden brown.

Heat oil in a pan, add the grinded masala, add turmeric, salt and hing.

Mix it, cook For the 4 mins and add the fried sena cubes.

Toos it and mix it well For the 10 mins.

Serve it hot with rice or roti.

For the Tempering / Tadka:

Curry leaves-2 spring

Fennel seeds-1/2 tsp

 

Garnishing

Fresh Coriander – 1/3 bunches

 

Spices For the Coconut Paste:

Red Chillies – 8

Coriander seeds -6 TSP

Cumin seeds -1 tsp

Fennel seeds – 2 tsp

Black Pepper corns- 1 tsp

Curry leaves-1/3 bunch

Cardomom-2

Cloves-2

Cinnamon-2

Coconut-1/2

 

For the Tomato paste:

Onion-2 medium

Tomato-2

Ginger garlic paste-1 tsp

Chilli powder-1tsp

Coriander powder-2 tsp

Turmeric powder-1/4 tsp

Cumin powder-1/4 tsp


Preparation method:

  1. Heat oil in a pan, add onions and sauté it.
  2. Add ginger garlic paste and cook For the 2 mins
  3. Add tomatoes, turmeric, chilli powder, coriander powder, cumin powder, salt and cook it For the 5 mins.
  4. Grind it in a blender and make a fine paste. Tomato paste is ready.
  5. Fry the spices in the dry pan, till it gets nice aroma.
  6. Grind the spices to a smooth paste with the coconut.Coconut paste is ready.
  7. Heat oil in a pan, add fennel seeds and curry leaves.
  8. Add tomato paste, turmeric and salt.
  9. When the oil floats at the top, add the yam pieces and mix it well
  10. Cover it and cook it For the 12 mins in a low flame.
  11. Add the coconut paste and stir it well and cook For the 10 mins.
  12. Garnish with Fresh coriander and serve it hot with rice or roti.
