Ingredients

Chicken -500gms

Potato-250gms(optional)

Salt to taste

Oil

For the Tempering / Tadka:

Fennel seeds-1tbsp

Curry leaves-3 sprig

Red Chillies-4

Ginger flakes-2tbsp

Garlic chopped-2 tbsp

 For the Sauté:

Shallots-250gm

Garlic paste-1/2 tsp.

Ginger paste-1/2 tsp

Tomatoes- 2 small(make it puree)

Turmeric – 1/2tsp

 Spices Used for the grinding

Cumin seeds-11/2 tbsp

Red Chillies-5

Coriander seeds-2tbsp

Garam masala(cloves, cinnamon, cardomom)-1/2 tsp

Garnishing-optional

Fresh Coriander – 1/3 bunches


Preparation method:

  1. Heat oil in a pan, add cloves, cinnamon, cardamom and spices.
  2. Roast it and make a fine powder.Keep it aside.
  3. Heat oil in a pressure cooker, add fennel seeds, curry leaves, and red chillies.
  4. Add ginger garlic flakes and crushed shallots, saute it .
  5. Add ginger garlic paste and cook it.
  6. Add tomato puree and the grounded spices with the salt.
  7. Cook it for few mins in a  medium flame.
  8. When the oil floats at the top, add the chicken pieces and mix it well
  9. Add the basmati rice, water(1:2 ratio) and coriander leaves.
  10. Cover it and cook it for 3-4 whistles in a low flame.
  11. Serve it hot with raita/pappad.

Preparation method

  1. Heat oil in a pan, add fennel seeds,red chillies and curry leaves.
  2. Add finely chopped ginger and garlic pieces and saute it
  3. Add minced shallots and saute it for few mins
  4. Add salt and turmeric , stir it well
  5. Add tomato puree and cook for few mins.
  6. Add chicken pieces,the ground spicy powder and mix it well.
  7. Add less amount of water and cover it, cook for 15 mins.
  8. When oil floats at the top, uncover and cook it till the water evaporates.
  9. Add fresh curry leaves and mix it well
  10. Serve it hot with rice or roti.

Mutton Recipes – Mutton Chukka – chukka is prepared using South Indian Chettinad style. Mutton chukka is one of the popular dish in chettinad cuisine. I have done nearly 16 types of chukka recipes with different combinations – chicken, mutton, prawn, fish, potato, cauliflower, egg and mushroom. you can watch these recipe videos in my site. Chettinad is famous for variety of spices that are freshly ground powders or masalas. Especially for non-vegetarian foods, it is one of the spicest most aromatic cuisine.

Mutton Recipes – Mutton Chukka – The cooking method is based on South Indian chettinad cuisines.Usually the chukka prepared using mutton. I have done four types of dishes, chukka with bone and chukka with boneless,chukka biryani, chukka curry with potatoes and chicken. you can watch these recipe videos in my site.This is my version of cooking, in the first part mutton pieces cooked with fennel, curry leaves, red chillies, onion tomato, ginger garlic gravy. Then the dry roasted spices powdered, added to the mutton and pressure cooked. The second part of the recipe includes the curry cooked in the slow process till the gravy is thick. it makes the mutton very juicy, tender and well coated with spices.The texture and taste of the recipe is great.

Mutton- 1kg
Garlic cloves-5
Ginger small piece-1
Shallots-15
Tomato -3 small
Turmeric-1/2 tsp
Fennel seeds-1/2 tbsp
Red Chillies-3
Salt to taste
Oil
Fresh Curry Leaves-4 Sprig

For the Grinding

Cumin seeds-1tbsp
Coriander seeds-1/2 tbsp
Red Chillies-4
Curry Leaves-1 sprig
Cinnamon-2
Cloves-4
Cardamom-2


Preparation method

  1. Dry roast all the spices for grinding and make a fine curry powder.
  2. Heat oil in a pressure cooker, add fennel seeds, curry leaves and red chillies.
  3. Add chopped ginger, garlic pieces and fry it.
  4. Add crushed shallots,cook it untill it turns to golden brown.
  5. Add salt,turmeric, ginger garlic paste,tomato puree and allow it to boil for few mins.
  6. Add the mutton pieces and mix it with the masala cook for few mins.
  7. When the oil separates, floats on the top and the gravy is thick,add the prepared curry powder and mix it well.
  8. Cover it and pressure cook for 3 whistles in a slow flame.
  9. Transfer the gravy into the pan, cook it uncover till it gets thicken.
  10. Garnish it with coriander leaves.Serve it hot with rice /roti.

Eggplant-250 gms

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Salt to taste

Oil


Preparation method:

  1. Wash and cut the eggplants into slices.
  2. Add chilli powder, turmeric, hing, salt  to the eggplant slices and mix it well.
  3. Marinate it for 15 mins.
  4. Heat oil in a pan, add the marinated pieces and fry it till it turns to golden brown.
  5. Add few at times and cook it in medium flame.
  6. Serve it hot with rice or roti.

Akkaravadisal recipe is a unique Tamil cuisine in India. Its a popular rice dish in Tamil Nadu and other South Indian states.The rice and dal boiled with milk,and jaggery, this is sweet pongal made specially in earthenware decorated pots with a wood fire.

Akkaravadisal recipe is simillar to sakarai pongal is generally prepared in temples as a prasadam, ie an offering made to a deity, as a thanksgiving to god. It prepared during special occasions and at any festival times. pongal festivals such as Thai Pongal is very famous in Tamil Nadu, India. Every January, Tamilians celebrate Pongal, a harvest festival, where pongal (the dish) is cooked to celebrate the harvest. Traditionally ancient Tamil people cook pongal before pooja and offer it to the deities.

Ingredients

Raw Rice – 1 cup
Moon dal-3/4 cup
Milk- 3 cup
Jaggery – 1/2 cup (if you need more sweet add ¾ to 1 cup)
Ghee – 4 to 5 tbsp.
Cashews – 12
Raisins – 7
Cardamom -3 or powder – a pinch
Edible camphor – a very tiny pinch (optional)


Preparation method:

  1. Dry roast the raw rice and  the dal for 2 mins.
  2. When you get nice aroma add 1:3 ratio of  milk and water to rice and cook it for  3 to 5 whistles until it get mashed up nicely.
  3. Consistency is very important for akkaravadisal recipe.
  4. Add  the remaining boiled milk and grated jaggery together into rice in a medium flame and stir it very well.
  5. Add Cardamom and edible camphor into rice.
  6. Heat the ghee in a separate pan and fry the cashews and raisins and add to the rice.
  7. Add the remaining ghee.
  8. Akkaravadisal recipe is ready. Serve it hot and enjoy!

Coriander seeds -6 TSP

Cumin seeds -1 tsp

Fennel seeds – 2 tsp

Black Pepper corns- 1 tsp

Curry leaves-1/3 bunch

Cardomom-2

Cloves-2

Cinnamon-2

Coconut-1/2


Preparation method:

  1. Fry the spices in the dry pan, till it gets nice aroma.
  2. Grind the spices to a smooth paste with the coconut.
  3. Add turmeric powder and salt to the masala paste
  4. Add the masala paste to the chopped broad beans and mix it well so that it’s nicely coated on it.
  5. Marinate it for 15 mins.
  6. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and curry leaves.
  7. Once spluttered, add the marinated broad beans and sauté it.
  8. Sprinkle water covers it and cook for 15 mins in a low flame.
  9. Serve it hot with rice.
