Patatas Bravas (Fried Potatoes in Spicy Sauce)

Patatas bravas also called patatas a la brava or papas bravas, is a traditional Spanish dish. Fried potatoes served warm with a sauce such as a spicy tomato sauce or a mayonnaise. This dish is commonly served in restaurants and bars throughout Spain, where it is traditionally accompanied by a shot of orujo or a glass of wine.It is one of the most spicy dishes served in Spain.


Ingredients:

Potatoes -500gms
olive oil
Fresh Parsley

For the sauce

Onion -1 medium
Garlic cloves-3
Chopped tomatoes-3
Paprika-2 tsp
Chilli powder-1tsp
Sugar-1 pinch(optional)


Preparation method

  1. Heat oil in a pan,add the chopped onions and fry it till it gets softened.
  2. Add chopped garlic cloves, chopped tomatoes, chilli powder, paprika,salt and sugar,mix it well.
  3. Cover and cook it for 12 mins in a medium flame.keep it aside.
  4. peel and cut the potatoes into cubes and pat dry.
  5. Heat vegetable oil in a pan and fry the potatoes until it reaches crisp and golden brown.
  6. Add the fried potatoes into the sauce and toss it.
  7. Garnish it with fresh chopped parsley leaves.

Eggplant Fritters with Honey

Ingredients

Eggplant – 1
Milk-1 cup
All purpose flour- 2 tbsp
Honey-2tbsp
Salt to taste
Oil for frying


Preparation method

  1. Slice the eggplant thicker and place it in bowl and cover it with the milk for an hour.
  2. In a bowl, mix the flour with the salt.
  3. Drain and pat dry the eggplant and dredge them in the flour and salt, shaking off any excess flour. Place it on a plate.
  4. Heat oil for frying in a large skillet.
  5. Add eggplant slices few at a time and fry until it turns to golden brown.Drain it in the paper towels.
  6. Drizzle with honey and serve immediately.

Ingredients

Eggs-5
Potatoes-200gms
Onion-1
Salt and pepper to taste
Olive oil


Preparation method

  1. Heat oil in a pan, add onions and saute it.
  2. Add the chopped potatoes and cook until its softened.
  3. Add the seasoning and stir it well.
  4. Whisk the eggs in a bowl add the potato mixture and stir it well.
  5. Heat oil in a pan and pour the mixture spreading evenly and cook it in a low flame.
  6. Once it cooked,set a large plate over the skillet and carefully invert onto the plate.
  7. Cut into wedges and serve warm.

Ensaladilla Rusa — Spanish Potato Salad

Ensaladilla Rusa- spanish potato salad,but it is said that the origin is from Russia.But Spanish have made their own version with boiled potatoes, mayonnaise and garnish it with fresh vegetables.its perfect salad for any seasons.


Ingredients:

Potatoes -2
Carrots -1/4 cup
Frozen peas -1/4 cup
Red Pepper -1
Boiled eggs-3
Mayonnaise-2 Cups
Pepper & Salt to taste


Preparation method

  1. Boil the potatoes in a salted water.Cool it, peel the skin and mash it and set aside.
  2. Add boiled carrots, peas,fresh peppers to the mash and mix it.
  3. Add the boiled egg whites,mayonnaise and mix it gently.
  4. Add the seasoning and grate the egg yolk evenly on the top of the salad, and garnish it with red peppers and chery tomato.
  5. Place the salad in refrigerator to chill and serve it .
