Egg Puff

Egg puff


Ingredients:

Eggs -4

Turmeric powder-1/2 tsp

Salt to taste

Oil

For the Sauté:

Onions-2 medium

Green chillies-2 medium

 For the dough

All purpose flour–1 cup

Water


Preparation method:

  1. Take the flour in a large mixing bowl and add normal water.
  2. Add less water at a time and start to mix the flour to form the dough.
  3. We need the dough to be soft, so add less water at a time.
  4. Instead of water, you can also use yoghurt or milk. This makes dough really soft.
  5. To make a smooth, soft dough. Knead well for 8-10 minutes, adding a little flour if the dough is too sticky.
  6. Continue the process till you get the right consistency of the dough.
  7. Once you’ve got the dough to the right consistency, cover with a damp cloth and keep it aside for 15 mins.
  8. Heat oil in a pan add onions and green chillies and fry it.
  9. Add eggs, turmeric and salt and scramble it gently.
  10. Garnish it with coriander leaves
  11. Divide the dough into small portions of evenly size.
  12. Roll these portions into balls between your hands till they are smooth and without cracks.
  13. Very lightly flour a rolling board and roll each ball into a thick circle.
  14. Place small portion of the stuffed scrambled egg on the corner and cover it with other half , press the ends.
  15. Heat the oil for the deep frying in a thick-bottomed flat pan on a medium flame.
  16. Deep fry the Pufs one at a time, very gently on each side. This will help the Pufs to puff up.
  17. Fry the pufs till it turns to golden colour. Drain on paper towels and serve hot.
  18. To avoid deep frying ,brush the puff with the oil and cook it in the oven, serve it hot.

Veg Cutlet


Mixed vegetables – 500 gms

Plain flour-200gms

Egg-1

Bread crumbs-200gms

Cheese-200gms

Smashed potato-300gms

Chilli powder-2 tsp

Turmeric-1/2 tsp

Salt to tatse

Oil to fry

 

For the Saute:

 

Onions-2 medium

Green chillies-2

Garlic cloves-4

Ginger thumb size-1

 

For the tempering:

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Cumin seeds-1/2 tsp

Curry leaves


Preparation method:

 

  1. Boil the vegetables with turmeric and salt.
  2. Filter it and crush it like a grated Vegtables.
  3. Heat oil in a pan, add tempering spices.
  4. Once they splutter, add chopped onions, green chillies, chopped garlic, chopped ginger and sauté it.
  5. Add the grated vegetables, turmeric powder, chilli powder and salt.
  6. Cook For the few mins in medium flame.
  7. Remove it and make it cool.
  8. Add chopped coriander leaves and smashed potato, grated cheese(optional) and mix it well
  9. Make balls and press it in cutlet shape.
  10. Roll the cutlets in plain flour, dip into egg, roll in the breadcrumbs.
  11. Heat oil in a pan, place the cutlet few at a time and fry it till it turns to golden brown
  12. serve it hot.

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Salt to taste

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put chillies in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Potato-250 grams

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Salt to taste

Oil

Wash and cut the potato into slices.

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put potato slices in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Onion-250 grams

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Rice flour-2tsp

Salt to taste

Oil


Preparation method:

Cut the Onion into lengthy strips.

Add chilli powder, garlic paste, turmeric, hing, salt, rice flour  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat the oil For the deep frying in a thick-bottomed flat pan on a medium flame.

Put Onion strips in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Aama Vada

chana dal – 1 cup
green chillies – 4
onion – 3 medium
fennel seeds – 1 tbsp

cumin seeds-1/2 tsp

curry leaves

chopped ginger-2tsp
corn flour (or) rice flour – 2 tbsp

salt,

hing
oil

  1. Soak the chana dal For the 3 hrs.
  2. Grind it half of chana dal with fennel seeds, cumin seeds, green chillies, curry leaves and ginger flakes.
  3. Now add rice flour, remaining chana dal, hing, salt, chopped onion, coriander leaves, curry leaves and salt.
  4. Mix it well to the right dough pliable consistency, the dough should be neither watery nor thick.
  1. Heat the oil For the deep frying in a thick-bottomed flat pan on a medium flame.
  1. Take small portion of dough and make it into small vadas and deep fry in oil.
  2. Serve hot with meals or as snack.

Cauliflower-250 grams

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Oil


Preparation method:

Wash and cut the cauliflower into small florets.

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put florets in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Bread-6 Slices

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Cut the bread slices lengthvise or diagonalwise.

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put bread slices in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Wash and cut the brinjal into slices.

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put brinjal slices in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.
