Ingredients

Okra – 250gms
Peanuts-50 gms
Sesame seeds -2 tbsp
Cumin-1/2tbsp
Green Chillies-2
Garlic Cloves-4
Turmeric powder-1/2 tsp
Hing-1/4 tsp
Salt to taste
Oil


Preparation method:

  1. Wash ,pat dry and chop the okra into small pieces.
  2. Heat oil in a pan add the okra pieces and stir fry it for few mins in  a medium flame.
  3. Add turmeric,salt,hing and mix it well.
  4. Dry roast the cumin seeds, peanuts and sesame seeds.
  5. Add it to the blender,add garlic cloves and green chillies and make a fine paste.
  6. Once the okra pieces are cooked well, add the peanut paste and cook it for 10 mins uncovered in a low flame.
  7. Once the masala evenly well coated with the okra pieces, switch off the flame.
  8. Serve it hot with rice or roti.

For the Tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Curry leaves


Preparation method:

  1. Wash ,pat dry and chop okra into medium slices.
  2. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  3. Once spluttered add chopped onions and fry it.
  4. Add chopped tomatoes and sauté it.
  5. Add turmeric powder, hing, sambar powder and salt.
  6. Add chopped okra and fry it gently.
  7. Sprinkle water, cover it and cook for 15 mins in a low flame.
  8. Add cooked rice and sesame oil and mix it well.
  9. Garnish it with fresh coriander leaves
  10. Serve it hot with pickle and papad.

Turmeric powder-1/4 tsp
Asafoetida/hing- 1pinch
Salt to taste
Oil

For the Tempering/Tadka:

Mustard-1/4 tsp
Urad dal-1/4 tsp
Cumin seeds-1/4 tsp
Red chillies -4
Curry leaves


Preparation method:

  1. Wash ,pat dry and chop okra into medium slices.
  2. Heat oil in a pan,add chopped okra and fry it gently.
  3. Add turmeric powder, hing and salt.
  4. Cook for 10 mins in a low flame.
  5. Whisk the yogurt and keep it aside.
  6. Add the fried okra pieces to the yogurt and stir it well.
  7. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  8. Once they spluttered add it to the dahi okra and mix it well.
  9. Serve it with rice or roti or salad.

Ingredients:

Okra -250 grams

Toor dal /Moong dal-1 cup

Tamarind juice-2 cup

Onion-1 medium/Shallots-10

Tomato-2

Green chillies-2

Salt to taste

Coriander leaves

Oil

 

Spices:

Turmeric powder-1/4 tsp

Asafoetida/hing- 1pinch

Sambar powder-1 tsp

 

For the Tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Fenugreek seeds-1 pinch

Curry leaves


  1. Wash and clean the toor dal or moong  dal,  add 1:2 ratio of water.
  2. Add turmeric powder, cumin seeds, hing  and  2 garlic cloves
  3.  Cook it in a pressure cooker For the 3 to 5 whistles.
  4. Heat oil in a pan, add mustard, fenugreek seeds, cumin seeds, urad dal, red chillies and curry leaves.
  5. Once they spluttered, add onions or shallots, green chillies and sauté it
  6. Add chopped  okra sauté it For the 5 min
  7. Add tomatoes, turmeric powder, sambar powder, hing, salt and cook it until oil floats out.
  8. Add cooked dal and tamarind juice, mix it well and cook it For the 12 mins in a low flame.
  9. Add Fresh coriander leaves and serve it hot.

Garlic cloves-6 (optional)
Coriander leaves
Salt to taste

For the Tadka/Tempering:

Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Red chillies-4
Curry leaves-1 spring
Fenugreek seeds-1/4 tsp
Cumin seeds-1/4 tsp

Spices:

Turmeric -1/2 tsp
Chilli powder-1 tsp
Coriander powder-2 tsp
Cumin powder-1/2 tsp
Pepper powder-1/2 tsp
Hing-1/4 tsp


Preparation method:

  1. Wash and past dry okra and cut into medium pieces.
  2. Heat oil in a pan add tempering spices.
  3. Once they spluttered, add chopped onions, green chillies, garlic cloves and sauté it.
  4. Add  chopped okra pieces and fry it.
  5. Add chopped tomatoes and spices, mix it well.
  6. Cook for 10 mins in a medium flame.Stir is occasionally.
  7. When the okra pieces are cooked, add tamarind juice, salt and stir it well.
  8. Add water and cover it cook for 10 mins in a medium flame.
  9. When oil floats on the top and the gravy is thick, switch off the flame.
  10. Garnish it with chopped coriander leaves.
  11. Serve it hot with rice,idli, or dosa.
