Ingredients

Shallots-200gms
Tamarind extract-1 cup
Asafoetida-1 pinch
Turmeric powder-1/4 tsp
Oil
Salt to taste
Sugar optional-1 pinch

For the tadka

Mustard seeds-1/2 tsp
Red Chillies-2
Curry leaves-2 sprig

For the Grinding:

Grated coconut-1/2 cup
Red chillies-6
Coriander seeds-2tbsp
Cumin seeds-1/2 tsp
Black peppercorns-1/2 tsp
Curry leaves-2 sprig

Preparation method

  1. Heat oil in a pan, add the spices for grinding and saute it till it turns to brown.
  2. Make it cool and add it to the blender grind it to a coarse powder.
  3. Heat oil in a pan add mustard seeds, red chillies, curry leaves .Once they splutter add onions and saute it.
  4. Add the hing , turmeric and vegetables of your choice. mix it well.
  5. Add the grounded powder and saute it.
  6. Add the tamarind extract,water and salt.
  7. Cook it for 10 mins in a medium flame.
  8. When it is thickened,switch off the flame.
  9. Serve it hot with rice.

Fish       – 1 kg

Coconut Milk  -1 cup

Turmeric Powder-1/2tsp

Salt to taste

 

Pepper Powder              1Teaspoons

Lime     1Numbers

Oil Coconut      2Tablespoons

Cardamom       3Numbers

Garlic Cloves    5Numbers

Ginger 1Numbers

Fennel Seeds   pinch

Coriader Powder           1Teaspoons

Onion  1Numbers

Curry Leaves    2Springs

Green Chillies


  1. In a bowl,Add turmeric powder,pepper powder, salt  and lime juice,mix it well.
  2. Add fish pieces and marinate it.
  3. Prepare the coconut milk. Blend the coconut into a fine paste and add boiling water.
  4. Keep aside For the 20 to 30 min and filter it.
  5.  Heat oil in a pan , add marinated fish and pan fry it.
  6. Heat oil in a pan and mustard and  curry leaves
  7. Once they splutter, add chopped onions, green chillies chopped garlic and ginger and sauté it.
  8. Add tomatoes, coriander powder, fennel powder and salt.
  9. Cover it and cook until oil floats on top.
  10. Add fried fish pieces and coconut milk; cook it For the 5 to 9 mins.
  11. Serve it hot with rice.

Fish Fry – Fish Fry Indian Style – Scrambled fish plantain fry  is called as fish puttu originated from Kerala. Kerala is famous for fish recipes.Usually fish puttu made with shark fish, but now a days mackerel or seer fish can also be used. Fish puttu is very popular dish in India especially in southern part of India. Scrambled plantain is originated from Andhra cuisine. Scrambled fish plantain fry is my version of cooking based on Andhra, Tamil and Kerala cuisines.Many variety of dishes can be prepared specially in southern part of India. Fish tamarind curry, Fish fry, fish thoran, Masala fried fish, Fish coconut curry, Fish chukka..each one is different in its preparation and taste. In Kerala fish recipes are more popular than other recipes. you can find this recipe in menu almost in all restaurants.

Fish Fry – Fish Fry Indian Style – Scrambled fish plantain fry – is one of my favorite dish. it is very delicious and easy to prepare and very very healthy dish.The scrambled fish or fish puttu prepared using Kerala cuisine method. The scrambled plantain is prepared using Andhra cuisine method. The tempering or tadka is based on Tamil Cuisine method. This is my version of cooking. It can prepared using very less spices and less oil. The fish boiled , stir fried with  grated plantain, onions, green chillies, ginger and garlic . Ingredients:

King Fish – 500 gms
Chilli powder-2 tsp
Turmeric-1/2 tsp
Salt to tatse
Oil to fry

For the Saute:

Onions-2 medium
Green chillies-2
Garlic cloves-4
Ginger thumb size-1

For the tempering:

Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Cumin seeds-1/2 tsp
Curry leaves


Preparation method:

  1. Pan fry the fish with turmeric and salt.
  2. Peel it and cleans the flesh.keep it aside.
  3. Boil the raw banana(plantain) with turmeric and salt.
  4. Peel and grate it evenly.Keep it aside.
  5. Smash it like a grated fish and grated plantain. keep separately.
  6. Heat oil in a pan, add tempering spices.
  7. Once they splutter, add chopped onions, green chillies, chopped garlic, chopped ginger and sauté it.
  8. Add the grated fish, grated plantain, turmeric powder, chilli powder and salt. Mix it gently.
  9. Cook it in a slow flame for 12 mins and stir it well.
  10. Add chopped coriander leaves and serve it hot.

Kerala Chicken Briyani

Ingredients

Chicken -1 kg

Basmati Rice-1 Kg

Salt to taste

Oil/Ghee

 

For the Tempering / Tadka:

Cardamoms-2

Cloves-4

Cinnamon bark-3 pieces

Bay leaves-2

 

For the Sauté:

Onions-4 medium

Green chillies-6 medium

Garlic-2tsp

Ginger -3tsp

Lemon-1

 

Garnishing

Fresh Coriander – 1/3 bunches

Mint leaves-1/2 bunches (optional)


Preparation method:

  1. Heat ghee in a pan, add washed basmati rice and fry it nicely For the 2 to 3 mins. keep it aside.
  2. Heat ghee/oil in a pressure cooker; add cloves, cinnamon, cardamom and bay leaves.
  3. Add Chopped onions and green chillies and sauté it
  4. Add ginger garlic paste and salt cook it For the 7 mins.
  5. When the oil floats at the top, add the chicken pieces and mix it well.
  6. Add the basmati rice and water to the chicken.(Water ratio 1:2- including the mixture prepared)
  7. Add lemon juice, coriander and mint leaves
  8. Cook it For the 3 -5 whistles
  9. Serve it hot with raita.

Kaya Upperi

Ingredients:

Plantain-2

Chilli powder-1 tsp

Cumin powder-1/2 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Salt to taste

Oil


Preparation method:

Peel Plantain and cut into slices.

Add chilli powder, turmeric, hing, salt  to the plantain slices and mix it well.

Marinate it For the 15 mins.

Heat oil in a pan, add the marinated pieces.

Cover it and cook it in a slow flame until it turns to golden brown.

Serve it hot with rice or roti.

Preparation method:

  1. Wash ,pat dry and chop okra into medium slices.
  2. Heat oil in a pan,add chopped okra and fry it gently.
  3. Add turmeric powder, hing and salt.
  4. Cook for 10 mins in a low flame.
  5. Whisk the yogurt and keep it aside.
  6. Add the fried okra pieces to the yogurt and stir it well.
  7. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  8. Once they spluttered add it to the dahi okra and mix it well.
  9. Serve it with rice or roti or salad.

Thoran is a dry vegetable curry from Kerala made from whatever fresh vegetables are around – snake beans, unripe jack fruit, sag (leafy vegetables), even green tomatoes.

  1. Heat the oil in a heavy-based saucepan or karahi set over a medium heat, and, when hot, add the mustard seeds followed by the curry leaves, cumin seeds and dried chillies. Stir For the about 30 seconds, then add the ginger paste, turmeric, salt and black pepper and fry For the 30 seconds.
  2. Stir in the cabbage and carrots and cook, covered, over a medium heat For the 5-7 minutes, or until the vegetables are tender, adding a splash of water if they start to stick to the pan.
  3. Stir in the green chillies and coconut, heat through For the a minute and serve. Serve with rice and poppadoms.
