Portuguese Cabbage Soup

Cabbage soup is a traditional Portuguese dish originating from northern Portugal. It is now considered aa a national dish and is popular all over the world. It is made from Collie-greens which is couvos cabbage.Easy and simple to prepare,but yummy and healthy.


Ingredients:

Onion-1
Potatoes-250 gms
Garlic Cloves-3
Bay leaf-1
Shredded Cabbage-250 gms
Salt to taste
Pepper to taste
Olive oil-2tsp

Preparation method

  1. Peel the potatoes and cut into slices
  2. Heat oil in a pan, add chopped onion garlic and bay leaf. Cook it until it is softened.
  3. Add the diced potatoes,salt,pepper and water.cook it for few mins.
  4. Add the shredded cabbage and mix it well.
  5. Cover it cook for 15 mins in a medium flame.
  6. Check seasoning and serve it hot.

German – Cucumber salad

German Cucumber Salad

 

German cucumber salad – is a traditional method of preparing salad.By adding onions and cucumber slices in a sour cream and vinegar for dressing overnight to get a maximum flavor.This is an excellent combination and refreshing salad.


Ingredients

Cucumbers-2
Onion-1(optional)
Sugar-1 tbsp
Vinegar-2 tbsp
Salt and Pepper to taste
Paprika(optional) -1 pinch
Parsley-few(Optional)


Preparation method

  1. Slice cucumbers and onion on a platter; season with salt .keep aside for few mins.
  2. Squeeze excess moisture from cucumbers.
  3. Stir  sugar, vinegar and parsley together in a large bowl.
  4. Add cucumber and onion slices into the mixture.
  5. Refrigerate over night; garnish with paprika to serve.

Sandwich-Egg Omlette

Bread Omlette


Ingredient:

Butter-50 gms

Cheese-100gms(optional)

Tomato-1

Onion-1

Green chillies-2

Salt to taste

Pepper to taste

Corander leaves-1 sprig

Eggs-4

Bread-2


Preparation method

 

  1. Heat butter in a pan , add chopped onions, tomatoes and gren chillies and sauté it.
  2. Add salt, turmeric, pepper powder and coriander leaves and sauté it.
  3. Pour the whisked egg, and spread like a  omelette.
  4. Cook it in low flame For the few mins.
  5. place the breads on one sid and close it with the other half omelette.
  6. Sprinkle cheese and again close it with the other half .
  7. Press it gently. You can see 7 layer bread omelette sandwich.

Chicken Paillard

Ingredients

Chicken Breasts -2
eggs-2
All purpose flour-1/2 cup
Bread Crumbs-1 cup
Salt and Pepper to taste
Olive oil


Preparation method

  1. Cut each chicken breast in half and place between two pieces of plastic wrap and pound them evenly with a butcher’s mallet until they are 1/8 of an inch thick.
  2. Season with salt and fresh cracked black pepper.
  3. Whisk the eggs and keep it aside.
  4. Lightly coat each piece with all purpose flour.
  5. Dip each piece in the egg wash and then coat each piece with the bread crumbs.
  6. Heat a pan to medium heat and fry the chicken in olive oil for 3 minutes per side.
  7. Serve with a salad.

Onion soup Sandwich


Ingredients

Bread-4 slices
Onions-2
fresh thyme leaves-tsp
Sugar-1 pinch
Chicken /Veg stock- 2tbsp
Sea Salt to taste
Black Pepper for seasoning
Butter – 2 tbsp
Olive oil-2 tbsp


Preparation method

  1. Heat a pan, add butter and olive oil.
  2. Add the onions and saute it until its softened.
  3. Add salt, thyme and pepper stir it well.
  4. Cook the onions until its caramelized.
  5. Add the stock and mix it well.boil it and simmer for few mins.
  6. when the water evaporates and it looks like a onion jam remove it.
  7. Butter one side of each slice of bread. On the other side, top with onion mixture.
  8. Top with more cheese and the final piece of sandwich bread.
  9. Repeat process in assembling the other sandwich.
  10. Heat butter in a pan and cook sandwiches over medium heat.
  11. Flip and cook until golden brown.
  12. Serve it hot immediately.

picnic idli

Sandwich Idli -is same as idli, but very easy to pack for the trip or picnic. it is spicy variety,chutney can be added while cooking process,it is similar to sandwich.


Ingredients

Idly rice – 4 cups
Urad dal – 1 cup
Fenugreek – 1 tsp
Salt – 1 tbsp
chutney-1 cup


Preparation method

  1. Wash and soak rice and dal overnight separately.
  2. Soak fenugreek seeds along with urad dal. Drain water.
    Grind dal and rice separately until smooth.
  3. Sprinkle water now and then.The consistency of the batter should neither be thick nor thin.
  4. Mix both the grounded rice and dal together. Add salt and leave it for the 7-8 hours for the fermentation.
  5. In winter it will take longer time, especially in Europe, US countries,you can use Oven to ferment
  6. Place the batter in a large container, as the batter will increase in its volume.
  7. After fermentation you can see the air pockets in the batter, mix it well.
  8. For the making idlis, grease the Idli plate with oil (optional). Heat the Idli pan with water and allow the water to boil.
  9. Pour 3/4 the ladle of idli batter to the idli plates
  10. Add a tsp of chutney and pour batter to cover the chutney.Steam it for the 10-12 minutes.
  11. To check it’s cooked, wet the fork and insert it into a idli if it is not sticky and comes out easily idli is ready.
  12. Just switch off the flame and take the idli plate out.
  13. Sprinkle water behind the idli plates and make it to cool.
  14. After a few seconds dip a spoon in water and carefully take out the idlis.
  15. Serve it hot with chutney or sambar.

Ginger-Thumb Size
Coriander-1 bunch
Lemon-1
Green Chillies-2
Red Chillies-2
Red Onion-1
Spring onions-3
Radish-1
Salt to taste
Black crushed pepper (optional)


Preparation method

  1. Finely chop all the ingredients, add it to a bowl
  2. Add the grated cabbage,radish to the chopped mixture.
  3. Add lemon juice,salt and mix it evenly.
  4. Squeeze out the juice.
  5. Sprinkle olive oil, sesame oil and check for seasoning.
  6. if required sprinkle salt and serve it
  7. Green salad is ready.enjoy.
