Bitter Gourd Recipe – Bitter Gourd Curry – is a popular dish in india.In India, variety of dishes made with bitter gourd.In North India – kaju karela(fried with Cashew nuts), Karela Sabzi(cooked with Potatoes) are very popular dishes.In Kerala cuisine – thoran(mixed with grated coconut), mezhukkupuratti (stir fried with spices), theeyal (cooked with roasted coconut) and pachadi(food for diabetics).In Andhra Cuisine Pachi Pulusu (Sesame seeds,coconut and peanuts). In Tamil cuisine includes pagarkai pitla, kattu pagarkkai(stuffed and fried).In Konkan cuisine, salt is added to finely chopped bitter gourd and then it is squeezed, removing its bitter juice.

The spice levels can be adjusted from mild to hot according to individuval preferences.Bitter gourd recipe is very yummy and delicious recipe with the crunchy bite.I have done 9 types of dishes with bitter gourd.You can watch the recipe videos in my site.For healthy diet, use less oil and add yogurt.After frying this with spices, to have a less bitter add grated coconut.

Ingredients

Bitter gourd-500gms
Onion-1
Green Chillies-2
Chilli powder-1/2tsp
Cumin powder-1/2tsp
Turmeric-1/4tsp
Asafoetida – 1 pinch
Mustard -1/4tsp
Urad dal-1/4tsp
Cumin -1/4 tsp
Cashew nuts-15
Curry leaves few
Salt – as needed
Oil – as needed


Preparation method

  1. Boil it in a salt water and cool it.
  2. Make a slits and keep it aside.
  3. Heat a pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  4. Once spluttered, add cashew nuts and fry it.
  5. Add chopped onions and sauté it.
  6. Add turmeric powder, hing, chilli powder and salt.
  7. Add the whole bitter gourd and fry it.
  8. Sprinkle oil, cover it and cook for 10 mins in a medium flame.
  9. Roast it evenly till it turns to light brown and crispy.
  10. Serve it hot with rice, sambar /rasam.

Ingredients:

Ivy gourd-250 gms

Turmeric powder-1/4 tsp

Asafoetida/hing- 1pinch

Sambar powder-1 tsp

Salt to taste

Oil

 

For the Tempering/Tadka:

Mustard-1/4 tsp

Urad dal-1/4 tsp

Cumin seeds-1/4 tsp

Red chillies -4

Curry leaves

 


 

Preparation method:

  1. Wash ,pat dry and boil it in a salt water and keep it aside For the to cool.
  2. Heat the pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  3. Once spluttered, add chopped onions and sauté it.
  4. Add the whole bitter gourd(not chopped) and fry it.
  5. Add turmeric powder, hing, sambar powder and salt.
  6. Sprinkle water, cover it and cook For the 15 mins in a low flame.
  7. Garnish it with fresh coriander leaves
  8. Serve it hot with raita or papad.

  5. Heat oil in a pan, add the marinated pieces and  tawa fry it .
  6. Add few at times, fry it till it turns to golden brown. Cook it  in the medium flame.
  7. Serve it hot with rice ,meals and curd rice.
