Potato baji


Ingredients:

Potato-250 grams

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Salt to taste

Oil


Preparation method:

Wash and cut the potato into slices.

Add chilli powder, garlic paste, turmeric, hing, salt  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat oil in a pan.

Put potato slices in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.

Egg fried rice


Ingredients:

Eggs -4

Turmeric powder-1/2 tsp

Salt to taste

Oil

 

For the Tempering / Tadka:

Cloves-2

Mustard-1/2 tsp

Urad dal-1/2 tsp

Cumin seeds-1/2 tsp

Fennel seeds-1/2 tsp

Curry leaves

 

For the Sauté:

Onions-2 medium

Green chillies-2 medium

Garlic-6 cloves -1/2 tsp. paste

Ginger -2 inch cube-1/2 tsp. paste


Preparation method:

 

  • Heat oil in a pan adds tempering spices.
  • Once they splutter add onions and green chillies and fry it.
  • Add ginger garlic pate and sauté it
  • Add eggs, turmeric and salt and scramble it gently.
  • Add cooked rice and mix it well. Sprinkle ghee or sesame oil.
  • Garnish it with coriander leaves and serve it hot with raita or pickle.

Rava DosaRava Dosa: – is a traditional south Indian dish usually prepared for the breakfast or dinner. It’s very healthy dish and very easy to prepare. Same process as idli –dosa batter, but instead of rice, we use sooji /semolina. You can prepare either thick or thin crispy dosa according to your taste. This dosa well goes with any sour or coconut related dishes like coconut chutney, tomato chutney, onion chutney and sambar. ___________________________________________________________________________

Ingredients

Rava -3 cup

Urad dal – 1 cup

Rice -3 tbsp

Salt – 1 tbsp

Preparation method

  1. Wash and soak both rava and dal for the 3 hrs separately.
  2. Grind dal and rava separately. Grind the rava coarsely and urad dal to a smooth batter.
  3. Sprinkle water now and then.The consistency of the batter should neither be thin.
  4. Mix both the grounded rava and dal together. Add salt and leave it for the 7-8 hours for the fermentation.
  5. In winter it will take longer time, especially in Europe, US countries, you can use Oven to ferment
  6. Place the batter in a large container, as the batter will increase in its volume.
  7. After fermentation you can see the air pockets in the batter, mix it well.
  8. Heat a non stick tava, brush it with the oil.
  9. If you use same tava for the preparing roti’s cut an onion into half and rub it all over the tava to avoid dosa sticking to the tava.
  10. Take a ladle of batter, pour it in the center and spread it from the center of the skillet in a circular motion.
  11. Sprinkle oil around the dosa. When it is cooked, flip it over to the other side and cook till done.
  12. Serve it hot with chutney or sambar.

Ingredients

 

Bread – 6 slices

Salt to tatse

Oil

 

For the tempering/tadka

Mustard-1/2 tsp

Urad dal-1/2 tsp

Chana dal-1/2 tsp

Cumin seeds-1/2 tsp

Peanuts-1 tsp

Curry leave-2 sprig

 

For the sauté:

Onion-2 medium

Green chillies-3 slitted

Ginger -1 inch

Tomatoes-2 medium

Turmeric powder-1/2 tsp

Coriander powder

Hing-2 pinch


 

Preparation method:

 

  1. Soak the bread in water For the 2 mins and squeeze it, crush it and keep aside
  2. Heat oil in a pan add tempering spices.
  3. Once they splutter, add the chopped onions, green chillies, ginger and sauté it.
  4. Add the chopped tomatoes, spices, salt and cook it For the few minutes.
  5. Add the bread crumbs and stir well.
  6. Garnish it with coriander leaves and sprinkle lemon juice and mix it well
  7. Serve it hot with baji.

Ingredients:

Bringal-250 gms

Red chillies-4

Tamarind-aamla size

Turmeric powder-1/2 tsp

Hing-2 pinch

Salt to taste

Oil

For the tadka:

Mustard-1/2 tsp

Urad dal-1/2tsp

Curry leaves-2 sprig


Preparation method:

  1. Heat oil in a pan add, chopped brinjal and sauté it.
  2. Add brinjal, red chillies and tamarind to the blender, and grind it to a fine paste.
  3. Heat oil in a pan add mustard, urad dal and curry leaves.
  4. Once they splutter add the ground paste, salt, hing and turmeric.
  5. Cover it and cook till oil seperates.
  6. Serve it hot with idly, dosa or roti.

Masala Cake omelette

Ingredients:

Eggs -4

Turmeric powder-1/2 tsp

Ginger garlic paste-1tsp

Chilli powder-1/2 tsp

Cumin powder-1/2 tsp

Coriander powder-1/2 tsp

Pepper-1/4 tsp

Coriander leaves-3 sprig

Salt to taste

Oil

 

For the Sauté:

Onions-2 medium

Green chillies-2 medium


Preparation method:

 

  • Take a bowl add aggs and all the spices whisk the gently so that it will mix with all the ingredients.
  • Heat oil in a pan add the egg masala and cook it in a low flame.
  • Once its done, don’t flip it.
  • Just roll it and cook it For the few mins.
  • Remove it and cut into medium slices
  • Heat oil in a pan, and place the slices and fry it low flame.
  • When it’s roasted on both the sides, swich off the flame.
  •  Serve it hot.

Valakkai Dal Rice:


Ingredients:

Plantain-2

Chana dal- 100gms

Tomato-1 medium

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Curry leaves-1 spring

Cumin seeds-1/2 tsp

Red chilleis-2

Sambar powder-1/2 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Salt to tatse

Oil


Preparation method:

Peel Plantain and cut into cubes.

Boil chana dal filter it and keep it aside.

Heat oil in a pan, add mustard, urad dal, red chillies, curry leaves and cumin seeds.

Once they splutter, add chopped tomatoes and sauté it.

Add the plantain cubes, boiled chana dal, sambar powder, turmeric, salt and hing.

Cover it and cook For the 15 min.

Add cooked rice and sprinkle sesame oil.

Garnish it with coriander leaves.

Serve it hot with raita or paapad.

Ingredient:

Butter-50 gms

Cheese-100gms(optional)

Tomato-1

Onion-1

Green chillies-2

Salt to taste

Pepper to taste

Corander leaves-1 sprig

Eggs-4

Bread-2


Preparation method

 

  1. Heat butter in a pan , add chopped onions, tomatoes and gren chillies and sauté it.
  2. Add salt, turmeric, pepper powder and coriander leaves and sauté it.
  3. Pour the whisked egg, and spread like a  omelette.
  4. Cook it in low flame For the few mins.
  5. place the breads on one sid and close it with the other half omelette.
  6. Sprinkle cheese and again close it with the other half .
  7. Press it gently. You can see 7 layer bread omelette sandwich.

Ingredients

Eggs-3
Mixed vegetables-1 cup
Soy sauce -2tbsp
Salt to taste
White Pepper to taste
Spring Onions-3
Cooked Rice-1 Cup
Oil


Preparation method

  1. Whisk the eggs,finely chop the spring onions and keep it aside.
  2. Heat the oil in a large frying pan, then add the rice. Spread out the rice so it all heats through, and then toss until coated well with the oil.
  3. Remove the rice and heat two tablespoon of oil, add the eggs cook and stirring it until its get scrambled
  4. Remove the eggs,heat oil in a pan add mixed vegetables and cook it for few minutes.
  5. Add the fried rice, eggs and mix it well.
  6. Add soy sauce, salt and pepper and stir it well so that its evenly mixed.
  7. Add the spring onions and serve it hot.

Ingredients:

Onion-250 grams

Chilli powder-1 tsp

Turmeric powder-1/2 tsp

Hing-1/4 tsp

Garlic paste-1/2 tsp

Gram flour-1/2 cup

Rice flour-2tsp

Salt to taste

Oil


Preparation method:

Cut the Onion into lengthy strips.

Add chilli powder, garlic paste, turmeric, hing, salt, rice flour  to the gram flour.

Add water and mix it to a dosa batter consistency.

Heat the oil For the deep frying in a thick-bottomed flat pan on a medium flame.

Put Onion strips in the batter and deep fry it in the oil.

Add few at times and cook in a medium flame.

Serve it hot with coconut chutney or chilli sauce.
