Arabian- Herb Omelette is one of the best green dishes in middle eastern country. it is very delicious and healthy dish.Easy to prepare for any time.It is authentic arabian dish simillar to Spanish tortilla, is called a kookoo in Iran, an eggah in the Arab countries. A tablespoon of yogurt can be added at the top with thyme while serving.Eggs filled with aromatics, herbs freshness.This dish is very yummy and healthy, juicy to taste.


Ingredients

Fresh Dill-few
Fresh Cilantro-2
Fresh Parsley-2
Lettuce-2
Spinach-2 leaves
Scallions-2
Thyme few
Yogurt-2 tbsp
Cherry tomato-1
Eggs-3-4
Salt to taste
Freshly ground black pepper
Olive oil


Preparation method

  1. Discard the coarse stems from the greens and chop the herbs finely and evenly.
  2. Beat the eggs well, add the herb mixture,seasoning and stir it well.
  3. Heat the butter in a frying pan, coating it evenly on all sides.
  4. Pour the egg herb mixture, and cook it over in a low heat for 15 minutes.
  5. Turn the omelette by reversing it onto a plate held over the pan, and cook the other side for 10 minutes.
  6. Pour the yogurt on the top of the omelette and place the cherry tomato sprinkle few thyme, serve it immediately.

Eggs-3
Green Peas-1/2 cup
Onion-1
Soy sauce -2tbsp
Salt to taste
White Pepper to taste
Black Pepper to taste
Spring Onions-3
Cooked Rice-1 Cup
Oil


Preparation method

  1. Whisk the eggs,finely chop the spring onions and keep it aside.
  2. Heat the oil in a large frying pan, then add the rice. Spread out the rice so it all heats through, and then toss until coated well with the oil.
  3. Remove the rice and heat two tablespoon of oil, add the eggs cook and stirring it until its get scrambled,cut into thin strips and keep it aside
  4. Heat oil in a pan add chicken pieces and cook it until its brown on both sides,keep it aside.
  5. Heat oil in a pan add onions and cook it until its get softened.
  6. Add the green peas and cook for few mins.
  7. Add the fried rice, eggs,chicken and mix it well.
  8. Add soy sauce, salt and pepper and stir it well so that its evenly mixed.
  9. Add the spring onions and serve it hot.

Cabbage-200gms
Ginger-Thumb Size
Coriander-1 bunch
Lemon-1
Green Chillies-2
Red Chillies-2
Red Onion-1
Spring onions-3
Radish-1
Salt to taste
Black crushed pepper (optional)


Preparation method

  1. Finely chop all the ingredients, add it to a bowl
  2. Add the grated cabbage,radish to the chopped mixture.
  3. Add lemon juice,salt and mix it evenly.
  4. Squeeze out the juice.
  5. Sprinkle olive oil, sesame oil and check for seasoning.
  6. if required sprinkle salt and serve it
  7. Green salad is ready.enjoy.

Sesame oil-2 tsp
Olive oil-1 tsp


Preparation method

  1. Finely chop all the ingredients and add it to the blender.
  2. Add lemon juice, olive oil ,salt, sesame oil and blend it to a fine paste.
  3. You can prepare green curry chicken, green chicken fry,green veg curry using green curry paste.
  4. Freeze the excess paste in the refrigerator and use it as needed.

Cauliflower tempura

Ingredients

All purpose flour-200gms
Ice cold water-1/2 cup
Oil for Frying
Salt and Pepper for seasoning
Cauliflower Florets -1 cup
Sauce for serving


Preparation method

  1. Blanch the florets and pat dry them.
  2. Mix the flour with cold water and add the seasoning.
  3. The batter should be neither thick nor watery,check the right consistency.
  4. Heat oil in a deep bottomed pan for frying.
  5. Dip the florets into the batter mixture,once evenly coated drop into the oil
  6. Add few at a times,fry them until it turns to golden brown and crispy.
  7. Serve the tempura’s warm with the sauce.

Middle eastern salad is mix of greens,cucumber,tomatoes.its very simple to prepare and easy to find the ingredients.Healthy and very tasty,refreshing salad.


Ingredients:

Cucumber-1
Parsley-100gms
Coriander-100 gms
Lettuce-100 gms
Cherry tomatoes-100 gms
Lemon juice-2 tbsp
Salt and pepper to taste
Olive oil
Onion -1(optional)


Preparation method

  1. Finely chop all the greens and add it to the bowl
  2. Dice the cucumber, onion and tomatoes add it to the greens
  3. Add lemon juice and seasoning, mix it well
  4. Toss it with the olive oil and serve immediately.

Thai green chicken Fry

Thai  chicken


Ingredients

Chicken breast-2
Salt to taste
Pepper to taste
Honey-1tbsp
Butter-50 gms.
Fresh Coriander

For the green Sauce:

Spring Onions-1 bunch
Yellow pepper-1
Coriander-1 bunch
Garlic cloves-4
Ginger thumb size-1
Lemon grass-1
Kaffir leaves-2
Lemon -2
Sesame oil-2 tsp
Olive oil-1 tsp


Preparation method

  1. Take a bowl, add chicken breast, pepper and salt for seasoning. Mix it well.
  2. Marinate it for 30 mins.
  3. Heat butter in a pan and place the  marinated chicken, skin facing towards the heat.
  4. Cook it for 20 mins  in a medium heat until it turns golden brown. Rotate it occasionally.
  5. Add the ingredients in a blender and make a fine paste by adding lemon juice, olive oil and sesame oil.
  6. Add the paste to the half cooked chicken and toss it.
  7. Roast it nicely till it turns to golden brown.
  8. Sprinkle honey to the chicken and toss it.
  9. Garnish it with coriander leaves.
  10. Serve it hot with the salad.

Ingredients

Chicken Breast-2
Egg-1
Breadcrumbs-250gms
Salt and Pepper for seasoning
Flour
Oil
Spring Onions-3
Cooked Rice-1 cup

For the Katsu Curry

Onion-1
Ginger small piece-1
Garlic cloves-2
Flour to thicken the gravy-1tbsp
Curry powder-1tbsp
Red chilli flakes-1 pinch
Honey-1/2 tsp
Soy sauce-1tbsp
Chicken stock-250ml
Salt to taste


Preparation method

  1. Dice the onions, garlic and ginger into small pieces
  2. Heat oil in a pan , add garlic and ginger and sauté it.
  3. Add the chopped onions and sauté it
  4. Add the curry powder,flour and mix it well
  5. Add the chicken stock little by little to avoid lumps
  6. Add the chilli flakes and a teaspoon of honey and cook for few mins.
  7. Add soy sauce, salt and stir it well, allow to cook for few more mins.
  8. Take the chicken breast and slice it in the middle.
  9. Season the flour with salt and pepper
  10. Dredge the chicken breast into the flour,give a egg wash and roll it into the breadcrumbs.
  11. Heat oil in a pan ,place the chicken and fry it until it turns to golden brown on each side.
  12. Blend the curry sauce, so that its smooth and glossy.
  13. Once chicken is done , make it slices.
  14. Finely chop the spring onions.
  15. Arrange rice and chicken slices on the plate and pour the katsu curry over it.
  16. Garnish it with spring onions and serve it immediately.

Baked fish

Roasted Fish


Ingredients

Fish-500gms
Red chilli paste-1tbsp
Lemon juice-2tbsp
Garlic minced-5
Soy sauce-1tbsp
Black crushed pepper-1tbsp
Salt to taste
Fresh Coriander-few
Basil leaves-few
Banana leaf or foil to wrap the fish


Preparation method

  1. Take a bowl, add the ingredients and make a paste
  2. Apply the marination paste over the fish
  3. Marinate the fish for 1 hr.
  4. Take a banana leaf wrap around the fish and arrange it in a baking tray.
  5. Preheat the oven 375 degrees, bake it for 20 mins.
  6. Banana leaf adds the flavor to the fish.
  7. Remove it and open the banana leaf(drier and crispy),place the fish on the plate.
  8. Garnish it with coriander, lemon wedges and salads.enjoy.
