Tortilla

Tortilla is a traditional dish have been eaten for thousands of years in North Mexico.it is a type of thin flat bread made from finely ground wheat flour,originally derived from the corn tortilla a bread of maize which predates the arrival of Europeans(from Spain)to the Americas.In appearance and use tortillas are rather similar to the South Asian chapati, indian roti(wheat), makki di roti(corn) and to the unleavened bread popular in Arab,Middle Eastern.Tortillas are commonly prepared with meat to make dishes such as tacos, burritos (a dish originating in northern Mexico), and enchiladas.The maize (corn) version is somewhat thicker and heartier in texture, while the wheat version is less easily broken due to its high gluten content, and can be made larger in circumference and thinner without breaking too easily.In Panama, a tortilla is a deep fried cornmeal disk, 2–3 inches in diameter.


Ingredients:

Wheat flour/Corn flour-1 cup

Water

Oil


Preparation method

  1. Take the flour in a large mixing bowl and add normal water.
  2. Add less water at a time and start to mix the flour to Form the dough.
  3. We need the dough to be soft, so add less water at a time.
  4. To make a smooth, soft dough. Knead well for the 8-10 minutes, adding a little flour if the dough is too sticky.
  5. Instead of water, you can also use yogurt or milk. This makes tortilla really soft.
  6. Continue the process till you get the right consistency of the dough.
  7. Once you’ve got the dough to the right consistency, cover with a damp cloth and keep it aside for  15 mins.
  8. Divide the dough into small portions of evenly size.
  9. Roll these portions into balls between your hands till they are smooth and without cracks.
  10. Very lightly flour a rolling board and roll each ball into a thick circle.
  11. Heat the pan on a medium flame.
  12. Place the tortilla on the pan, when the colour changes flip over to the other side. When you see the black spots on the opposite side again flip over it.
  13. Press it gently with spatula. This will help the tortilla to puff up.
  14. Remove it and apply the butter. Serve it hot.

Eggplant Casserole

Eggplant casserole is very popular Mexican dish.It is very tasty and healthy too.it is very simple and easy to prepare.Mexican food is basically a fusion of Mexican, American and Spanish. The cuisine is as complex as other cuisines in the world.Always it includes the fusion of vegetables, meat, tomatoes with cheese or cream.


Ingredients

Eggplants -250 gms
Tomatoes-2
Green chilies – 2
Onion -1
Cumin powder-1/2 tsp
Garlic paste-1/2 tsp
Cheddar cheese
Salt to taste
oil


Preparation method

  1. Heat oil in a pan, add chopped onion and toss it until it turns to golden brown.
  2. Add green chillies,garlic,cumin mix it well and cook for few mins.
  3. Heat oil in a pan and place the eggplant slices/cubes and fry it till its softened.
  4. Preheat oven to 450.Spray baking sheet with oil and place eggplant slices on it in a single layer and the sauce over eggplant and sprinkle with half the cheese. Repeat layers ending with cheese.
  5. Bake at 350 until heated through and bubbly for 20-30 mins.
  6. Serve it hot.

Mashed potatoes with garlic parmesan

American mash

Mashed Potatoes- is easy-to-make and perfect for Thanksgiving and Christmas. They are as simple to make, but the consistency is very important. Not too airy or too heavy, with just enough butter, salt, pepper, and cream to get a fluffy perfect mash.


Ingredients

Potatoes-250gms
Garlic crushed-1/2 tbsp
Cream/Milk-1 Cup
Butter-30gms
Grated Parmesan-1/4 cup
Salt and Pepper to taste


Preparation method

  1. Boil the potatoes with salt, peel it and mash it and set aside.
  2. Melt butter in a saucepan,add garlic ,milk and cook it  in  a medium heat until simmering.
  3. Remove from the heat add mashed potatoes and add seasoning, parmesan cheese to the garlic mixture and mix it well.
  4. When its thicken, serve it.

Vegetable Casserole

Vegetable Casserole is simple and very easy homemade dish.This is prepared using everyday vegetables,neither complicated nor time-consuming.But very healthy delicious warm food.


Ingredients

Onion-2
Red Pepper-1
Garlic Cloves-2
Tomato puree-1 cup
Cumin Powder-1/2 tsp
Mixed Vegetables – 1cup
Cheddar Cheese -1 cup
1/2 cup sour cream (optional)

Salt and Pepper to taste
Olive oil


Preparation method

  1. Heat oil in a pan, add onion and saute it.
  2. Add chopped peppers, garlic, tomato puree, salt, pepper and cumin and stir it well.
  3. Add mixed vegetables and mix it well.
  4. Cook it in the medium flame and bring to simmer for few mins.
  5. Preheat oven to 350 degrees.
  6. Spread half of veg mixture in the baking dish and sprinkle with half of cheese.
  7. Repeat layering process with remaining mixture and cheese.
  8. Cover dish with foil and bake 15 minutes.
  9. Garnish with tomatoes, sour cream and olives.

  2. Blend it until well combined.
  3. Pour among glasses. Drizzle with extra honey to serve.

Salt to taste

Pepper to taste

Butter-50gms


Preparation method 

  1. Heat butter in a pan add chopped onions. cook it until softened.
  2. Add garlic and mushrooms. Saute it for 5 mins.
  3. Add water and cook it for few mins.
  4. Add cream stir it gently. cook it in a low flame for 3 mins.
  5. Season with salt and pepper.
  6. Serve it hot.
